Candied Pumpkin

Candied Pumpkin
2 pieces of jaggery
1 small pumpkin or butternut squash peeled and cut
1 cinnamon stick
1 anise star
1 cup of water
Instructions:
Add all ingredients except the pumpkin to pan and simmer at low heat until jaggery is liquid like a caramel sauce. Add pumpkin and cook until is tender and caramelised with the jaggery.
