Italian Vegetable Soup

1 aubergine
1 carrot
1 potato
1 courgette
1 onion
handful of green beans
2 tablespoons of tomato sauce
1 tsp of oregano
1 tsp of salt
2 tsp of olive oil
Chop onions and carrots and sauté then add the rest of the veggies to the pot. Season with oregano and salt and simmer until all vegetables are tender. Enjoy with some crusty bread.
