Molotes- Plantain Patties

Ingredients:

4 Plantains steamed and mashed

1 Tin of black beans mashed into a paste

1/3 of Vegetable oil for frying

Preparation:

Steam the plantains until the peel burst open, let them cool and mash in a bowl, let them cool for over an hour. Prepare the beans, cook them in a pan with oil until soft and mash them. Once all ingredients have cooled. Form a large patty and add a tablespoon of beans, place it on a cling film and roll them and reform into a patty. Heat oil in the pan, at a low heat to avoid burning the patties, the high content of sugar in the plantain will burn it easily.
