Ghee

Ingredients:

1 pound of unsalted butter

Preparation:

In a heavy pot, heat butter over medium heat. Continue to cook at medium- low heat. The butter will bubble and make bubbling sounds. When it's almost done, milk solids will begin to collect at the bottom of the pan. When it is done, in about 15 mins it will clear and become quiet. Quickly take off the heat-it can burn quickly. if this happens it will begin to foam again -cool slightly. Pour Ghee through metal strainer into a glass container. Store at room temperature.

Ayurvedic elixir -Helps absorb nutrients Cools and lubricates. If you don’t cook ghee long enough it will mold. Is very nourishing for Vata and Pitta- Kapha can do with less.
