Vegetable rice bowl with sesame oil chilli dressing


1 Courgette

1/4 cup of Mushrooms

1/2 head of Broccoli

2 sliced green onions

1 cup Brown rice

4 Tablespoon of Sesame oil

1 juiced lemon

1 tablespoon of Agave syrup

1 tsp of chilli flakes

2 tsps coconut oil


Cook rice according to package instructions. Slice vegetables, except the green onions and sauté in a pan with little coconut oil. Mix sesame oil, lemon juice, agave syrup and chilli. Assemble the vegetables on top of the rice and drizzle the dressing and scatter the sliced green onions.
