Mexican Tofu Scramble
Ingredients:
A block of firm tofu - crumbled
1/2 onion chopped
1 red bell pepper chopped
1 jalapeño ( less or more depends on how spicy you like it)
1 handful of Spinach
1 tsp of paprika
1 tsp of garlic powder
1 tsp of salt
1 tsp of pepper
1 Tbsp of ghee or oil
DIRECTIONS:
Heat frying pan and add oil or ghee. Add the onions, tomato sauté for a 1 min or so then add the rest of the ingredients and seasoning. Stir and cook until tofu and vegetables brown a bit.
Serve with refried beans and tortillas for a hardy Brunch or on its own over avocado toast.
