Oatmeal Raisin Cookies


2 cups of oats

1 cup of oat flour

1/2 cup of raisins

1/2 cup of peanuts

1 cup of brown sugar

1 1/2 tsp of cinnamon

1/2 tsp of nutmeg

1 1/2 tsp of ginger

1/2 tsp of baking powder 

pinch of salt

3/4 of oil

1 cup of soy milk 


Preheat oven to 200c. Mix the dry ingredients in a large bowl; add the oil and mix well. Stir in enough milk to make a firm mixture. Place heaped spoonfuls on oiled baking tray and flatten. Bake 12-15 minutes until golden around the edges. Makes 12 large cookies.
