Miso Vegetable Soup with Shirataki noodles

Ingredients:

1 courgette sliced 1 carrot cut  in match sticks  1/2 head of cabbage 1 tsp of minced ginger 3 baby corns 1/4 cup of green beans 1 package of shirataki noodles (Japanese Yam flour noodles) 1 tsp of white miso 2 cups of veggie stock  1 tsp of Mirin (Japanese sweet wine) 2 tsp of soy sauce or Tamari for gluten free.

Preparation:

Add all sliced vegetables in the stock and ginger. Rinse the noodles and add to vegetables. Cook until vegetables are soft. In a small bowl add the miso and dissolve with a bit of the stock. Add 1 tsp of miring and 2 tsp of soy sauce mix and add to soup. You can add shiitaki mushrooms, I usually do, did not have any this time :( Add some Togarashi at the end for a sPicy kick!
