Quinoa Upma


Quinoa - 2 cups

Vegetables- carrots, courgettes, onions, cabbage etc. slices - 2 cups

Nuts-Cashews or Almonds

Green Chillies -1 or 2

Fresh ginger - 1/2 inch chopped

Cilantro - Chopped - 1/2 cup

For seasoning-

Oil or Ghee- 2 Tbsp

Mustard seeds- 1 Tsp

Cumin seeds- 1/2 Tsp

Water - 4 cups

Salt- 2 tsp or to taste


Wash the vegetables and cut into small pieces. Heat the skillet and put oil in it. Add all the ingredients for seasoning. After seeds of mustard split, add ginger and green chillies. Sauté for a minute or two. Then add onions and sauce until it turns brown stirring frequently. Then add other vegetables and water. Add salt and cover with lid. Cook for 5 mins. Now add the quinoa and stir. and cook for about 15 - 20 mins until quinoa becomes soft. Garnish with cilantro leaves and Add a squirt of lemon to bring out the flavours. Serve hot.

Effect on Doshas: Pacifies Vata, slightly increases Pitta and pacifies Kapha
